Who decides what's for lunch?

Where's our regular white pasta? Where's the salt? How come we have skim milk now instead of whole milk? Why are things changing, and who gets to decide what's on the menu, anyway?

These are excellent questions and we get them a lot. Students are always surprised to learn that Opaa's Wellness & Nutrition staff is actually required to design school menus based on Healthy Hunger Free Kids Act 2010 regulations that dictate weekly quotas for:

  • Sodium
  • Saturated fat
  • Calcium
  • Iron
  • Vitamin A
  • Vitamin C
    and much more

Opaa's food nutritionists use computer analysis to evaluate individual food items. Then they must mix and match food items to come up with appealing meals that meet requirements across a week's worth of menus.
